Lasagna à la Mexicana

In our family we renamed this original Kraft “Layered Fiesta Casserole” to “Mexican Lasagna”.  It has become almost as popular as lasagna in our house and is very easy to prepare, even in advance. Give it a try!
  • 1 lb. (450 g) extra-lean ground beef (turkey or chicken)
  • 1 green pepper, cubed
  • 1 red pepper, cubed
  • (optional: 1 bag of burrito seasoning)
  • 2 cups salsa
  • 1/2 big can diced tomatoes, undrained
  • 2 cups frozen corn, thawed
  • 3-4 big tortillas, cut into wedges
  • 1-2 cups shredded cheese


Brown meat and peppers. Stir in salsa, tomatoes and corn and bring to boil, simmer for a bit.

Grease baking dish and fill with (2-3) layers of meat mixture, tortillas and cheese (cheese on the top).

Bake at 375°F for 25-30min. Let stand for 5 min. before serving.

Pasta Casserole with Zucchini Squash and Carrots

In our church we have the tradition to prepare meals for families with new-born babies and this is usually what I cook for such a joyful occasion. I double the portion and have one for my family and one to give away. Very easy!

If you do not like zucchini squash  replace it by any other green vegetables such as broccoli or beans. I often also add some ham cubes to this vegetarian meal to make the men in my family happy.


  • 300g Penne Rigate
  • 2 big carrots, cut into cubes
  • 2 zucchini squash, cut into 0.5″ slices
  • 2 cups grated cheese
  • 1 cup whipped cream
  • 2 eggs
  • salt, pepper, nutmeg
  • parsley, minced.


Cook vegetables in boiling water with a bit of salt added, starting with carrots and adding zucchini squash later, until al dente, take out, pour some cold water over top and let drain.  Add hot water and 1 tsp. of oil to the pot to cook the pasta al dente, let drain. Mix pasta, vegetables and 1 cup of the cheese. Pour into a greased casserole dish. Mix whipped cream with eggs, salt, pepper and a pinch of nutmeg, pour over top. Sprinkle with cheese. Bake at 400°F for 30 min. Sprinkle with parsley before serving.

Meat Lasagna

This recipe has been a family favourite for years.  I make the sauce Bolognaise ahead and just prepare the Béchamel sauce before the lasagna goes in the oven. By this the preparation time can be reduced to twenty minutes. The baking takes about one hour, so allow enough time before serving.



In a greased casserole dish layer sauce Bolognaise, Bechamel sauce and pasta, about 3 layers. Top layer with both sauces. Bake at 200˚C for 40 min. Top with cheese and bake for 10 min. Let sit for at least 10 min. before serving.
